
OUR PROCESS OF PRODUCTION
The method of production and elaboration of Jamones de Juviles S.A. has been a process of more than thirty years of direct experience.The main points in which we base our work are: tradition, manual work and natural curing.
We work on the hams with same methods that have beed used in The Alpujarras for years. Their basic ingredients are: the sea salt and the cold of Sierra Nevada.
This process requires a manual work that we are not in favour to put aside. In the first place, we select the best ham of female pig, and then it is covered by salt for several days. Without additives or preservatives. We have to extract the blood out of the fresh ham. Then the ham is hanged in the drying rooms in winter and is got down to the cellar during the summer. All these tasks are made as always, taking care of each one of the hams for them to have the exact flavour and quality we want.
All this tradional work does not prevent us of using the modern techniques that are necessary to conduct the company: control of the temperature and the humidity of each room, constant revision by the vet, total hygiene in the process of production, etc.
You can see these are our secrets: quality in the manual elaboration, curing in a tradional way and taking advantage of the modern techniques of production.
