Juviles Ham (Alpujarra)

From a white pork leg (female), is characterized by being cured artisan and natural, in Juviles in the center of the Alpujarra, over 1,250 m. high, in the natural park of Sierra Nevada, without nitrifying or preservatives, only sea salt. Your healing time is between 16 months to 20 months.

  • Booking Ham: Ham with over 16 months of healing.Photo
  • Gran Reserva Ham: Ham with over 18 months of healing. Photo
  • Gran Reserva Palette: Palette with 10 months of healing. Photo
  • Boneless Ham: All these guys can do boneless, either clean or completely cut in halves or whole.Photo

Sierra Juviles Ham (Trevélez)

Product specific designation I.G.P. “Trevélez ham” made in Juviles handmade and natural, in the center of the Alpujarra, over 1,250 m. altitude in the natural park of Sierra Nevada, from a high quality white pig, salted and without nitrifying or preservatives, only sea salt, complying with the rules of the regulatory board. Your healing time is between 17 months and 23 months of natural healing. All Trevélez hams have to be covered by the Control Board and must have a seal with a “T” listed and controlled by the Council with blue, red or black.
Types:

  • Blue seal Trevélez Ham: Ham with more than 17 months weighing 7-8 kg. approx. Photo
  • Red seal Trevélez ham ham over 20 months and weighing approximately 8-9 kg. Photo
  • Black precinct Trevélez Ham ham over 23 months and weighing approximately 10 kg more. Photo

Iberian hams Juviles

The hams are cured Iberian Juviles handmade and natural, in the center of the Alpujarra, over 1,250 m. altitude in the natural park of Sierra Nevada, salted but nitrifying or preservatives, only sea salt, complying with the rules governing the Iberian and Certicalidad certified. Your healing time is between 2 years and 4 years of healing naturally.
