Juviles ham reserva or gran reserva

Juviles Ham (reserva or gran reserva) are typical hams from Alpujarra.
Based on a white pork leg (female), it is characterized by being cured by hand and totally natural without nitrifying or preservatives, only with sea salt, in the municipality of Juviles in the center of the Alpujarra, over 1,250 m. altitude, in the natural park of Sierra Nevada. Its curing time is between 14 months and 20 months.

Types:

  • Reserva Ham: Ham with over 16 months of curing.
  • Gran Reserva Ham: Ham with over 18 months of curing.
  • Gran reserva Paleta: Paleta, 10 months curing time.

Boneless Ham: All these types may come out boneless, cut either as “V” or completely clean in halves or a whole piece.
